I’ve been wanting a Dutch Oven and Santa delivered this Christmas! By Santa, I mean my husband bought me the one I sent him a link to. It’s she perty? They come in all colors and I picked purple. The thing that makes a Dutch Oven awesome is that it’s a cast iron pot coated in enamel that makes it easy to clean. The tight-fitting lid seals in the moisture and retains all the flavor and moisture of your recipe, plus it can go from the stove to the oven. I’m in love.
This Dutch Oven Chicken Dinner recipe is a total breeze to make and I love it not only because it was delicious, but also because of how fast I had it on the table. Running your kids to sports every night? This recipe is a lifesaver. I had everything in the pot within 15 minutes or so, then it cooks for an hour which is hands-off time I’m helping with homework, and boom, dinner is done!
There is NO added fat in this recipe. No butter, no oil. Just chicken, veggies, and a few seasonings, so it’s very healthy and my family devoured it. Next time I may try to squeeze more chicken in because it went so fast!

Dutch Oven Chicken Dinner
Looking for EASY Dutch Oven recipes? This Dutch Oven Chicken Dinner recipe is our family favorite. One pot meals are such easy dinner recipes and this one is fast and delicious! Preheat oven to 425. Lay slices of onion along the bottom of a 6qt. Dutch Oven. Spread potatoes on top of onions. Arrange carrots around the perimeter of the pot. Sprinkle a bit of paprika and garlic powder over the veggies. You really don't need to measure this. Just season lightly. Season both sides of chicken thighs with salt and pepper. Place in the middle of the veggies in the Dutch Oven. Cut the lemon in half and squeeze it over the meal. Throw lemon halves right in the pot. Lightly season the entire pot with more paprika and garlic powder. Cover and cook for 1 hour until veggies are tender and chicken juices run clear. To brown the chicken a bit before serving, remove the lid and turn your oven on broil. Cook until desired color is reached. I broiled for about 5 minutes and could have gone longer for a deeper color but I had hungry kids to feed!Dutch Oven Chicken Dinner
