One of my favorite things about being a single-serve coffeemaker kinda girl is how easy it is to try new flavors. I love anything really unique and Brooklyn Bean Roastery has cornered the market on cool coffee.

I met the guys from Brooklyn Bean at the Summer Fancy Food Show in NYC a few months ago and they are as cool as their coffee. (And hot chocolate!) The first thing you’ll notice is their unique packaging and the names of their roasts. Their #1 flavor? Fuhgeddaboutit! No seriously, that’s the name of the coffee. It’s one of my favorites too. This brand started in 2012 and grew very quickly. They now have 17 flavors plus seasonal varieties.

Brooklyn Bean is a hip brand, a growing company, and they’re unique because they are a small business. These are hands-on guys that read their Amazon reviews themselves. They want to know what people think of their products so they can continuously deliver coffee that people love.

I can’t tell you the joy I get out of choosing which one to start my day with every day. So much fun! Everything is roasted in New York in small batches. This is more like a craft coffee and one that people who truly love coffee are going to flip for.

The Hamilton Beach FlexBrew

I’ve been brewing my Brooklyn Beans k-cups with the @HamiltonBeach FlexBrew. This is an awesome little machine for coffee drinkers for several reasons.

One thing you can see right away is that it’s pretty slim and doesn’t take up much counter space, which is a huge bonus for me. In the picture above, take note of the position of my mug. A travel mug would fit in here too. Now look at the picture below…

You can use the adjustable cup rest to bring your coffee mug up closer to the drip. Really smart! Another nice feature of the FlexBrew that differentiates it from other brewers is that you can use a single-serve pod OR regular ground coffee in it, and there’s no need for an additional piece to hold the ground coffee. Just put it right in the top of the machine.

To use the Brooklyn Bean single-serves, just fill your mug with water and pour it in the top of the machine. Place your mug under the drop, and put your coffee pod right in the top. You have to force it down a bit because the puncture is actually through the side of the pod.

Single Serve Hot Chocolate

The FlexBrew gives you the option to brew up to 10oz. of coffee and you can choose a Regular or Bold roast (I always go for Bold!). This was a cup of hot chocolate I was making for my son. Yum! Within just a few minutes I had brewed he and my daughter each a different kind of hot chocolate, and a coffee for myself. The FlexBrew is so easy to use.

I chose the Brooklyn Bean French Roast to make a coffee marinade for this chicken dish, but you could easily go with any other dark roast.

The recipe is really quite easy to make, but do plan ahead a bit. You’ll need some time to cool your coffee off before you put the chicken in it, and you want to marinate your meat for a few hours before cooking. So there really isn’t a ton of hands-on time, but you are better off starting this one earlier in the day and you’ll be thanking yourself at dinnertime.

I’m the only hardcore coffee drinker in my house but my entire family loved this recipe. There were NO leftovers! The coffee combined with the other fresh ingredients in the marinate makes this chicken so tender and flavorful. I love cooking in a cast iron skillet and this is a new go-to recipe for me.

Prep Time 20 minutes
Cook Time 45 minutes
Total Time 1 hour 5 minutes

Ingredients

  • 3lbs. boneless, skinless chicken thighs (I used 2 packs for a total of 10 pieces)
  • 8oz. brewed Brooklyn Bean
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup balsamic vinegar
  • 1 tablespoon mustard
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • Pepper to taste
  • Chopped fresh chives for garnish, optional

Instructions

Brew a dark roast Brooklyn Bean k-cup and chill 8oz of it in a cup in the refrigerator until cool.

While the coffee is chilling, combine all other ingredients except the chicken in a large bowl. Stir well to combine, then add chilled coffee and stir again.

Place chicken in a gallon size resealable plastic bag, or a container with a lid. Pour coffee mixture over chicken and turn to coat.

Marinate in the refrigerator for 3-4 hours.

When you're ready to cook, preheat oven to 425 degrees Fahrenheit.

Place chicken in a cast iron skillet and pour remaining marinade over it.

Bake for 45 minutes or until chicken is fully cooked and browned on the top. If you want a little more color (I did!) turn the broiler on and place skillet directly under broiler for 1-3 minutes.

Garnish with fresh chopped chives if desired.

Notes

Start this recipe earlier in the day and putting it together for dinner will be a breeze. You'll need a little time to chill the coffee and then a few hours to marinate the chicken. The rest is easy and very quick. Serve with rice and a green veggie for a delicious dinner. My kids loved this meal!

    I want to try the Cyclone and Express-o coffees. They are both dark roasts. I have found the dark roast coffees to have so much flavor! Usually, I drink them black, but, if I really want to indulge, I will add some half and half. To me, that is like drinking dessert!
