Valentine’s Day Dessert: Quick and Easy Pudding Parfait

I love to make a sweet treat for my family for Valentine’s Day, and since more often than not this holiday falls on a regular ‘ole school night when we have homework and sports and all that jazz, I’m also looking for a pretty simple recipe. I created these Valentine’s Day Pudding Parfaits for my family years ago, and they LOVE them. So much so that they ask for them each Valentine’s Day!

This works perfectly for me because they couldn’t be easier to make. There’s no baking involved, just a little prep time. You can totally whip these up at the last minute, which is basically how I get through  my life. 

The beauty of this dessert is the layering, so while you can enjoy it in any dish, it looks best in clear glass. I’ve made them in mason jars and wine glasses, and if you have clear drinking glasses, that works as well.

The ingredients are super simple: pudding, milk, Cool Whip, a little red food coloring to make it pink, and sprinkles. That’s it! Mix and divide it up per the recipe below, and you end up with 4 bowls of pudding to layer into these pretty parfaits. Don’t forget the chocolate curls to make them extra special!

Mmm…doesn’t that look good?! My kids gobble these right up. Here’s the lowdown on how to make and assemble these pudding parfaits.

Valentine's Day Dessert: Quick and Easy Pudding Parfait

Easy and delicious pudding parfait, and it's pink for Valentine's Day!

Prep Time 10 minutes
Cook Time 10 minutes
Additional Time 10 minutes
Total Time 30 minutes

Ingredients

  • One 3.9oz. package of chocolate instant pudding
  • One 3.9oz. package of white chocolate instant pudding
  • 4 cups of milk
  • red food coloring
  • 1 container of whipped topping, defrosted (I used Cool Whip)
  • 1 chocolate candy bar (I used a Hershey bar)
  • Valentine's Day sprinkles, red or pink (optional)

Instructions

  1. Prepare the chocolate pudding as directed with 2 cups of milk and put in the refrigerator to set.
  2. Pour 2 cups of milk in a second bowl to make the white chocolate pudding. Before you dump the packet in the milk, stir in 6 drops of red food coloring to turn the milk pink. Then add the white chocolate pudding mix and whisk together until blended. Put in the refrigerator to set. After about 5-10 minutes the pudding should be firm.
  3. Take 1/3 of the chocolate pudding and put it into an empty bowl. Do the same thing with the pink white chocolate pudding. TIP: An easy way to estimate 1/3 of the pudding is to use a utensil to make a peace sign on the pudding, and then scoop out one of the triangles.
  4. Mix 1/3 of the whipped topping (use the peace sign trick again!) into each of the bowls you just made that contain 1/3 of the pudding mixes. You should now have 4 bowls: one with chocolate pudding, one with pink white chocolate pudding, one with chocolate pudding mixed with whipped topping, and one with pink white chocolate pudding mixed with white topping.
  5. Layer the puddings into 4 clear glass mason jars or wine glasses in any order you'd like. To fill the jars as we have in the photos, spoon the puddings into individual disposable pastry bags (you could easily use a Ziploc bag instead). Snipped about a 1” opening and pipe a spiral, starting from the outside and working into the center. Hold the bag steady and rotate the jar. This allows you to place the pudding exactly where you wanted it. After doing each layer, tamp the jar a few times on a folded towel to level.
  6. Finish with a dollop of whipped topping, dividing the remaining 1/3 of the container among all 4 dessert cups.
  7. Make chocolate curls by peeling the chocolate bar with a vegetable peeler and garnish the pudding cups with them. Finish it off with some pink or red sugar sprinkles if you'd like!

Notes

If you don't want to bother with bags to pipe the pudding into your glasses, you can easily spoon the pudding in layer by layer. Add small amounts at a time, and use the back of your spoon to push the pudding against the edges of the glass to make those nice layers visible from the outside.

You could easily adapt this to any holiday. Change the pink to green for St. Patty's day, or just mix up a couple different pastel colors for Easter.

Yields 4 servings, but if you put them in smaller glasses, you can stretch it to more than that.
