It’s summertime! This has to be my favorite time of year for obvious reasons: no real schedule, the beach, warm weather and no bulky coats, and oh yes, the summer food! Our family loves to grill out all summer long. Really we grill year-round but definitely more so when the weather is nice. I knew that grilling saved me from doing dishes (three cheers!) but I didn’t really realize how energy-efficient grilling is. - I’m going with my favorite first here: no dishes. Okay you might have plates and forks and knives. But no big pots and pans to wash and I love that! You can save yourself the hot water needed to wash these up. Plus the time. Ah, less time at the sink. Sign me up.
- Grilling is more efficient and actually uses less energy than your stovetop or oven.
- If you’re not cooking inside, you’re not heating up your house…and then paying to cool it off again. Seriously, my kitchen gets so hot when I have the oven on. I hate that in the summer. Give your AC a bit of a break and cook outside!
In my opinion everything tastes better on the grill. My husband and kids feel the same way. It’s actually sort of funny how quickly they scarf down grilled dinners versus stuff that comes out of the oven. And don’t think you have to make just meat! We grill veggies all the time. I’ve even made pineapple and s’mores on the grill. Anything goes! I love grilling out when you’re having a crowd over to eat. We made a big spread for both Memorial Day and Father’s Day when we had company over and it was perfect to cook the entire meal on the grill. Almost no clean up after entertaining?! Yes, please!
One of the biggest hits at our Father’s Day cookout was this Grilled Ginger Lime Shrimp. This is so easy to make and shrimp cooks really fast on the grill. It was flavorful and just delicious. I’ve got the recipe for you below!
Grilled Ginger Lime Shrimp Recipe Combine all ingredients except shrimp to make the marinade. Add the shrimp and toss to coat. Refrigerate for 30-60 minutes before grilling. When ready to grill, heat the grill to medium heat. Put the shrimp on skewers while the grill is heating up. Put the shrimp skewers on the grill and cook them for about 3 minutes.
