This is one of my favorite pasta dishes. It’s so easy to make and seems kinda fancy with that pretty yellow color from the saffron in there!
You might have to grab a packet of saffron at the store but otherwise I bet you have most everything needed already on hand. That makes this another go-to.
And of course it’s delicious! The saffron adds a really unique flavor. You can make this with any kind of pasta. I often go with penne or look for something with a cool shape. This time we did bow ties, one of the kids’ favorites!
Enjoy!
Saffron Pasta With Peas Bring a large pot of water to a boil. Cook pasta according to package directions. I use a healthier pasta like Dreamfields or Barilla Plus or some whole wheat version just to cut down on refined flour products. But honestly, this dish will taste a bit better with a white pasta because it seems to soak up more of the sauce. It was yummy with the Barilla Plus I used here, too, but something to keep in mind. While the pasta is cooking make the sauce. Heat the olive oil (feel free to eyeball it!) over medium heat in a saute pan. Add the onion and cook, stirring occassionally, for about 4 minutes. Add the garlic and continue to cook until the onions are translucent. Add the saffron to the pan. I kind of crush it up in my fingers a little to release some of the color and flavor before throwing it in the pan. Stir to combine. The onions will turn a bright yellow color! Add the chicken broth and bring to a low boil. Add the peas. Cook for about 2 minutes. Lower the heat and stir in the milk. Heat for another 2 minutes or so. Drain the pasta and combine it with the sauce. Allow it to sit in the sauce for a few minutes before serving to soak it up. Throw in some Parmesan cheese if you'd like too!Saffron Pasta With Peas

Sounds yummy! I love saffron and peas! How much saffron comes in a packet?

Hmmm…I can’t say for sure. It might say on the packet but I don’t have one handy. I’d say about a 2-3 teaspoons.
