This recipe for Rice & Beans with Smoked Sausage was sort of thrown together in a hurry. I’ve made rice and beans many times. It’s quick and easy and a hit with all of us. One night I had a menu plan fail, as in I didn’t have a menu plan, and my smart husband who is a whiz in the kitchen threw this meal together and we devoured it. You’ll see when you read the ingredients that it was a wing-it recipe, but it was so good that I made him make it again for us and write down what he did. The seasonings are the wing-it part. If you don’t have them in your pantry, get creative and sub something else! The part that adds the best flavor is the cilantro. So be sure to grab that and then feel free to wing our winged recipe and make it your own! 😉

Rice and Beans With Smoked Sausage In a saucepan, prepare the brown rice per the instructions on the box. Read this ahead so you can plan your meal. Some rice takes a loooong time to cook! While the rice cooks, heat the oil in a large saute pan over medium heat. Add the onion and sliced sausage and cook until onions are translucent. Add the kidney beans and seasonings and simmer on low heat. When the rice is ready, add the rice to the saute pan and mix and simmer on low heat for a few minutes to combine the flavors. Finally, add cilantro and stir. Simmer 2 more minutes and serve.Rice and Beans With Smoked Sausage
