Fresh fruits and veggies are always my stock-up items when I hit the farmer’s market. Asparagus is always so cheap at my market, about $1 a bundle so I usually grab at least a couple. Sometimes the bundles aren’t as big as you need to pull together an entire recipe like this one. This Kielbasa And Asparagus Pasta was so easy to make and it was really tasty. The kids ate it right up.

I knew I wanted about a pound of asparagus for this recipe and I used this EatSmart digital kitchen scale to make sure I had enough. I’ve often seen recipes that measure things by weight as opposed to a cup measure so this scale really comes in handy often. I also think that we often have no idea what portion size is appropriate and using a digital scale like this is a really effective way to get a handle on what you’re actually eating. Eyeballing it isn’t always as accurate as you might think, I’ve learned!

I was able to get the EatSmart scale right out of the box and start using it. It comes with the 2 batteries it needs to operate. Love that! And there are only two buttons: One to turn it on and off and use the tare function; and one to change the units. I wanted to weigh my asparagus in this little colander so I had to tare it, or subtract the weight of the container from the total weight so that I knew I had a pound of asparagus and not aspargus + colander. So I just put the colander on the scale, hit the tare button and it zeroed out. Then when I added the asparagus I knew I was only weighting the vegetable and not the container, too. I had 15.95oz., so just slightly shy of a pound. Perfect!
This recipe is so easy to make. Just cook the pasta in one pot, saute the kielbasa, asparagus, and garlic in another, and combine them. I used a short cut Penne pasta, but you could really use anything you like best.

Kielbasa And Asparagus Pasta Bring a large pot of water to boil on the stove. While it's coming to a boil you can cut up your Kielbasa, asparagus and garlic. I used the EatSmart scale to weight the asparagus bunch. You need about 1lb. for this recipe and some bunches are much smaller than that, especially if you get them really cheap at the farmer's market. You may need two. When the water comes to a boil, dump in the box of pasta and cook per package directions. In a large skillet, heat the olive oil over medium high heat. Add the sliced Kielbasa and cook for about two minutes. Stir and then add the asparagus pieces and the garlic. Stir occasionally until the Kielbasa and asparagus are both browned. The pasta should be done at about the same time, a total of 8-10 minutes. Drain the pasta and add the Kielbasa mixture to it. Stir to combine. If it looks a little dry, add another drizzle of olive oil and stir again.Kielbasa And Asparagus Pasta
