Yup, it’s my Mom’s birthday today and what kind of daughter would I be if I didn’t let the world know? Or at least my little corner of it. 🙂 I would love to post a silly picture of us decorating Christmas cookies, or of her letting her grandkids bury her in sand at the beach, or one of her doing aerobics in her kitchen with my sister while we’re all laughing hysterically. But I love her too much and value my life. So instead I’m sharing with you a picture that says ‘Mom’ to me.
This is lamby cake. My Mom painstakingly puts this creation together every. single. Easter. No one likes the green coconut grass (you did know that, right Mom?), but it’s necessary to complete the scene. Notice the jellybean eyes and the little sliver of a red one turned into a smile. My kids RUN into her house looking for lamby cake at Easter. We usually enjoy him after we’ve had Easter baskets, egg hunts, tons ‘o food, and at least one other dessert. Lamby cake says ‘Mom’ to me because it represents all the ways she goes the extra mile to show us her love.
