October 17 was National Pasta Day. This is a holiday I’d like to celebrate weekly at least. Do you love pasta? I could live on it. I’m definitely a carb addict (to my detriment) but can’t stop, won’t stop. I love me a good noodley dish! This week our moms are chatting about our favorite pasta recipes.
Oh my gosh. I LOVE pasta. Sadly, right now I’m carb free, but man, if you put a bowl of Fettuccine Alfredo in front of me I’m not sure I could resist temptation! Mmmmm…..
My favorite pasta dish is chicken parmesan. We have an easy peasy one that we fix almost WEEKLY. I’m actually craving it right now as I type! Other than that……I’m not a huge pasta person, but I do also love a good homemade mac-n-cheese. Mm. Mmm. Mmmmmmm.

I looooove pasta so this is a tough one for me. One of my favorites is pasta with pesto. I like to make my own pesto (you can get my recipe here) from the basil in my garden and freeze it to enjoy all winter long. It’s so easy to toss with a box of cooked pasta and absolutely delicious. I’ve got some other awesome pasta recipes to try too!
My absolute favorite pasta dish is Pad Thai. I love the fried rice/noodle combo, stir-fried with eggs and tofu, and the flavorful nuances of shrimp, garlic, pickled vegetables and spices, peanuts and a wedge of lime. My mouth is watering as I write this.
