This recipe was so quick and easy to make and SOOOO good! I love fresh salsa especially with mango in it. You can find my favorite mango salsa recipe here, but this one I whipped up super fast for a weeknight meal that we all loved but I spent hardly any time on.
To make this dish I marinated the chicken for about 4 hours (or longer) in this Archer Farms Mango Curry Grilling Sauce that I found at Target. Look for it next time you’re there. It’s really good and inexpensive If you can’t get it, you can definitely make this recipe without it. Make the salsa and don’t bother marinating the chicken. Or, make your own marinade of mango, mustard, curry powder, some lime juice, salt, pepper, and olive oil. That’s how I’d ‘wing it’! But if you can find this sauce at Target you’d probably get good use out of it. We really like it!
The salsa is so simple to make. I made it ahead and kept it in the refrigerator to combine the flavors until we were ready to eat. Three simple ingredients and that took me all of about 5 minutes to throw together. What was left we ate with some tortillas later!

Curried Mango Chicken With Mango Salsa Marinate the chicken breasts in a plastic zip bag with Mango Curry Grilling Sauce for at least 4 hours. Just pour enough in there to cover the chicken and some to soak in, maybe 1/3- 1/2 cup. In a small bowl pour the canned diced tomatoes, the chopped cilantro, and the diced mango. Stir to combine and refrigerate until you're ready to serve. I made this ahead of time, probably 3 hours before we ate. When you're ready to cook dinner you can either grill the chicken or bake it. I baked it at 350 degrees Fahrenheit for about 40 minutes. When the chicken is cooked, plate it and spoon the mango salsa over the top.Curried Mango Chicken With Mango Salsa
