Delicious Cream Cheese Mashed Potatoes Recipe

Mashed potatoes have been one of my favorite foods since I was a kid, and now that I’m the mom making the holiday meals, I’ve spent plenty of time perfecting my own mashed potato recipe.

The secret ingredient, and one method I use that makes these the BEST is in the recipe below!

Comfort Food Is Just What We Need

This year has been one for the record books, and we’ve all faced challenges: working from home, maybe not being able to work at all, virtually schooling our children, and missing our loved ones.

And one of my favorite recipes is this one for Cream Cheese Mashed Potatoes. I could quite possibly live on them. 

I’ve always loved mashed potatoes, but once I learned how to make them with Philadelphia® Cream Cheese, I kicked my recipe up to a whole other level. 

I got everything for this recipe at Walmart, which makes my life so easy. I can grab cute dishes, napkins, and holiday decor, then pop over to the grocery side of the store and get all of my ingredients. 

This saves me time and money (and a little sanity, too!).

Cream Cheese Mashed Potatoes Recipe

This recipe is going to be your new favorite for special holiday meals, or when you’re craving comfort food. Creamy mashed potatoes were never soooooo good!

First, peel, cut, and boil the potatoes until they are tender.

Drain them in a colander in the sink.

Pour the potatoes back into the pot, and mash them over low heat to remove excess water. This little trick, along with using Philadelphia® Cream Cheese, is what makes these mashed potatoes the best!

The Philadelphia® Cream Cheese will incorporate faster and more evenly if you chop it up into 6-8 pieces as shown before mixing it into the potatoes.

This recipe uses just a handful of ingredients and is full of flavor. Get the complete directions below. 

Yield: 10, ½ cup servings

Cream Cheese Mashed Potatoes

Cream Cheese Mashed Potatoes
Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes

Ingredients

  • 5 pounds Yukon Gold or Russet potatoes
  • 1 stick (½ cup) unsalted butter
  • ½ to 1 cup of whole milk
  • 1 package (8 ounces) PHILADELPHIA Cream Cheese, softened
  • 1 bunch of chives for garnish, chopped

Instructions

    1. Peel potatoes and cut into quarters. Pieces should all be relatively the same size so they cook evenly.
    2. Place potatoes in a large pot and cover with cold water.
    3. Place pot on stove and cover. Over high heat, heat until boiling. Remove cover and reduce heat to medium, simmering until potatoes are fork tender, 15-20 minutes.
    4. While potatoes are cooking, put butter and ½ cup of milk in a small saucepan and heat over low heat to melt. Stir frequently and avoid bubbling the mixture. This is just to melt the butter and warm the milk.
    5. When potatoes are cooked, pour the potatoes into a colander over the sink, draining the water out of the pot. Return cooked potatoes to the pot and place the pot on the stove over low heat.
    6. Using the beaters of a hand mixer, mash the potatoes in the pot, allowing as much steam as possible to escape. The goal is to get the water out of the potatoes before adding the other ingredients. This should only take about one minute. Turn the stove off.
    7. Cut the block of cream cheese into 6-8 hunks and add to the potatoes. Mix with a hand mixer for 30-60 seconds.
    8. Carefully add the melted butter and milk mixture to the potatoes. Beat with hand mixer until smooth, taking care to not overmix, for 1-2 minutes.
    9. For creamier mashed potatoes, add more milk until you reach the desired consistency. Mashed potatoes will thicken a bit upon standing, so I generally lean toward adding closer to the whole cup of milk, but mashed potato consistency is a matter of personal preference!

    To serve, spoon mashed potatoes into a serving dish. Top with chopped chives.
