This Homemade Bisquick Blackberry Cobbler recipe is easy to make and absolutely delicious, especially served with vanilla ice cream.
Last week our local grocery store had pints of blackberries on sale for only $1. The kids usually gobble them right up so I bought a few…which of course meant they decided they didn’t want them anymore. Ah, kids.

I wasn’t about to throw away fresh berries so I turned them into a quick and easy dessert with this Bisquick Blackberry Cobbler.
It was so easy to make. I cooked up the blackberries with a few simple ingredients and the topping is made with Bisquick.

I actually already had everything I needed in the house, no need for a shopping trip. Love when that happens. We had these for dessert last night and everyone loved them.
The cobblers can be made in individual servings in ramekins or souffle dishes. I placed them in a baking pan so that if there was any overflow, it didn’t make a mess in the oven.
A silicone baking mat or piece of parchment paper will help them stay in place while baking.
If you’d like to make them ahead of time, they do reheat well. Pop them in the microwave for 45 seconds or so until warm.
How to Make Blackberry Cobbler With Bisquick
When it’s time to serve, add a scoop of vanilla ice cream, and top with orange peel or zest to dress them up. The ice cream is a must! The orange peel is optional.

Bisquick Blackberry Cobbler Recipe
Ingredients
- 3 cups of blackberries
- 1 tablespoon cornstarch
- 1/2 cup sugar
- 1/4 teaspoon ground cinnamon
- 1 tablespoon orange juice
- 1 tablespoon water
- 1 teaspoon orange zest
- 1 tablespoon of butter, melted
- 1/4 cup milk
- 1 cup Bisquick mix
- 1/4 teaspoon ground cinnamon
- 1 tablespoon sugar
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- In a medium saucepan combine the sugar, cornstarch, and cinnamon. Then stir in the blackberries, orange juice, water, and orange zest. Cook over medium to medium-high heat until boiling. Stir while boiling for about 3 minutes.
- Evenly divide the blackberry mixture into four 7-8oz. ramekins.
- Use a fork to stir the topping: Combine the melted butter, milk, Bisquick, cinnamon and sugar until well mixed. Drop hunks of the topping evenly on top of all of four of the ramekins of blackberry mixture.
- Place your ramekins on a baking sheet so you don't have a mess in your oven should they overflow. A silicone baking mat will keep your ramekins from sliding around.
- Bake for 15 minutes or until the topping is golden brown and the blackberries are bubbly.
- Allow to cool a bit before serving but they're best served warm...with vanilla ice cream of course!
Notes
You can make them ahead of time and refrigerate until you're ready to eat. Warm up in the microwave for one minute or reheat in the oven at 325 degrees Fahrenheit for about 10 minutes.
