My earliest memories in the kitchen are of baking with my Mom and Pyrex was always a staple in her kitchen. It is in mine, too, and I’m so excited to be a part of celebrating 100 years of Pyrex! Can you believe this iconic brand is 100 years old?!

My Mom’s Thanksgiving pies were always made in a Pyrex glass pie plate and I love this pretty Pyrex 100 line pie dish. Mom, are you coming for Thanksgiving this year?!
Pyrex measuring cups are definitely the thing I use most in the kitchen when I’m cooking. These come in a variety of sizes and fun colors.
These storage containers are being used ALL the time in my house. So fun and I love that they’re glass, not plastic, the lids are all interchangeable and they’re see through so I know what leftovers I’ve got in the fridge all the time.
I used this Pyrex Portables to make the recipe for Mexican Lasagna I’ll share below. The 9″x13″ glass dish has build in handles which make it SO easy to remove from a hot oven. I absolutely love that feature. And if you want to take it with you, maybe to a pot luck dinner? It comes with a great carrying case complete with handles. And if you make a cold dish like a dessert, use the included ice pack to keep it cold. LOVE this set. (Great for taking dinner to a friend!)
Since Pyrex is a kitchen fave I thought I’d share one of my favorite recipes that I’ve made for years, Mexican Lasagna! This one is special to me because it’s one of the first recipes I started making for my husband after we got married. And it stuck! I still make it 13 years and 2 kids later.
You just layer all the ingredients in the dish, bake it up, garnish it to make it perty, and eat it up. Yum!
This is one of those recipes that is actually better left over. I liked it better on day 2 and it makes a LOT so you’re in luck. Here’s the recipe:
This easy Mexican Lasagna recipe goes together fast and is even better left over! Preheat oven to 400 degrees Fahrenheit. Place a skillet over medium high heat on the stove and brown the beef until cooked through. Add 1/2 cup of the salsa and stir to mix well. Remove from heat and set aside. Pour the rest of the salsa into the bottom of a 9"x13" glass baking dish. Tilt it to spread evenly if needed. Place 3 of the tortillas on top of the salsa as showed in the image above. (2 on each side, cut the 3rd one in half and place straight edges against edges of the dish) Spread half of the refried beans on top of the burrito shells, then top with half the meat mixture, and then half of the sour cream. Then sprinkle 1 cup of the cheese evenly on top. Repeat all of these layers. When you get to the cheese, reserve a bit to sprinkle on top for garnish at the end. Cover the pan loosely with aluminum foil and bake for 20-25 minutes. Remove from oven and allow to sit for about 5 minutes before garnishing with scallions, tomatoes, avocado, and remaining cheese if desired.Mexican Lasagna Recipe
