My family loves Mexican food, and I love quick and easy meal prep, so this recipe for Mexican Lasagna is a family favorite. This one is special to me because it’s one of the first recipes I started making for my husband after we got married. And it stuck! I still make it 20 years and 2 kids later.
The only real cooking involved is browning the hamburger meat, and the rest is simple assembly of ingredients.
