We had an avocado addiction in this house. It’s one of the reasons we recently joined Costco – a great deal on a boatload of avocados. We go through so many and love to find new ways to serve them so it’s no surprise that this Easy Avocado Hummus recipe is a huge hit around here.
I love it because it’s so easy to make and it’s healthy. Doesn’t that look fresh and delish?
You put all the ingredients into the food processor and let it do it’s thing. Done! You can have this made in a snap before company comes over and serve it up as an appetizer.
Tortilla chips, pita chips, veggies like baby carrots and pepper strips are perfect with this. Isn’t it pretty? Tastes just as good as it looks, promise! Enjoy!
Easy Avocado Hummus Recipe
This Easy Avocado Hummus Recipe is not only delicious but it's so easy to put together and full of healthy ingredients. Perfect party food!
Ingredients
- 1 ripe avocado
- 1 15-ounce can cannellini beans, drained and rinsed
- 3 tablespoons olive oil
- 1 small garlic clove
- 2 teaspoons fresh lemon juice
- 1/4 cup fresh cilantro leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
Add all the ingredients to a food processor and puree until smooth and creamy
Taste and adjust seasonings. Add more olive oil, lemon, cilantro, salt and/or pepper, if desired. Puree again.
Serve with tortilla chips, flatbread, as a spread for sandwiches or with tacos and burritos.
