I was introduced to John Wm. Macy’s CheeseSticks this summer at the Summer Fancy Food Show in NYC and immediately was WOWED! Guys, if you like cheese (who doesn’t?) you are going to love these. They have a full line of crispy, crunchy, flavorful cheesesticks that are perfect to serve with your salad and soup.
They also have these more snacky CheeseCrisps which we love with a good dip. They’re substantial, so none of that breaking-off-in-the-hummus type of thing you get with flimsy chips and crackers.
I actually got to meet and chat with John Wm. Macy himself! He started this company in NYC in 1985 and with a delicious, high-quality product, he’s been growing ever since. Really great guy to chat with and let me just tell you, he knows what he’s doing with a CheeseStick!
I mentioned above that one thing I love about these products are their versatility. Grilled cheese and tomato soup for lunch is now special with a side of Original Cheddar CheeseSticks. They get softer in the soup, like anything would, but it takes some time to lose the crunch so there’s no soggy cracker effect here.
These CheeseSticks are hand rolled, twice-baked, all-natural, and made with the finest sourdough and cheeses. Trust me. You can taste all that in one bite.
The Smoked Jalapeno CheeseCrisps are SO good with hummus. If you want some football food that’s easy to get on a plate, this is it. Delicious and filling.
The dinner struggle is real around here. I have been in a real slump with meal planning, so I love when I can grab something out of the cupboard and come up with a unique dish that my entire family loves. My kids love chicken and this one was so easy and delicious. Truly, the flavor of the Original Cheddar CheeseSticks after cooking them this way was amazing!
Read the whole recipe through before starting. You can do a little prep work ahead of time to make the dinner rush go more smoothly. I give you my Leek and Corn Saute side recipe here too but feel free to serve with some steamed veggies and rice. Quick and easy meal!
Cheddar Cheesesticks Breaded Chicken Recipe
These are easy to make and delicious, a hit with the whole family!
Ingredients
- 1 to 1.5lbs. thin cut boneless, skinless chicken breasts, rinsed and patted dried.
- 3/4 cup flour
- 2 eggs, lightly beaten
- 1 box of John Wm. Macy's Original Cheddar CheeseSticks, crushed (a good job for the kids!)
- 5-6 tablespoons of oil (more as needed while cooking)
- Salt and pepper
Instructions
Line up 3 pie plates or shallow bowls for your dredging stations. First flour seasoned with salt and pepper, then eggs, then crushed CheeseSticks.
Heat the oil in a large skillet over medium high heat. Hot, but not splattering hot.
Dredge each piece of chicken in flour (shake off the excess), then egg wash, then press into the CheeseStick crumbs so they stick. I used a fork to do this.
Cook each piece of chicken in the skillet about 3-4 minutes per side until cooked through and browned. I could get 2-3 pieces in the pan at a time.
Do a couple of rounds if you need to, placing finished chicken on a paper towels on a plate to drain off some of the excess oil, tented with aluminum foil to keep them warm.
Notes
I served these with a Leek and Corn Saute. If you need a side dish, this is a great one: Heat 2 tablespoons of olive oil over medium heat. Slice and clean 3-4 leeks, (just the white part) and cook in oil until softened. Add one diced shallot and the corn from 4 cobs of corn. Season with salt and pepper. Top with sliced grape tomatoes and fresh basil if desired to jazz it up with some color.
Finally, John Wm. Macy also makes these SweetSticks and I am just in LOVE here. Let me tell you how it feels to have one of these Madagascar Vanilla SweetSticks with your morning coffee. It’s like Heaven basically. Just the right amount of sweetness, not overpowering. I like to dip it in my coffee and warm it up. Ooooohhhh, so good.
The kids like to pop the Dutch Chocolate SweetSticks into their ice cream. And so do I, let’s just be honest here. I use my SweetSticks as a spoon!
