We were shopping for something special to make for dinner last weekend when I spotted these little purple potatoes in the produce section. There weren’t many in a pack so I grabbed a couple and brought them home and whipped up these Purple Parsley Potatoes. So, so easy to make and they were a hit with the whole family. Everyone loves a purple potato!
I washed them up, diced themed, and tossed them with olive oil, salt and pepper, and parsley. Cook ’em up and that’s it! Super fast and easy. I gave you some ideas for measurements below, but just eyeball it. Measurements on all the other ingredients are going to depend on how many potatoes you cook. Don’t worry. It would be pretty hard to screw this one up. Give it a try! It’s a perfect, fun and delicious side dish!

Purple Parsley Potatoes Recipe
Ingredients
- Purple potatoes, washed and cut into bite-size pieces
- Olive Oil
- Parsley, dried or fresh if you have it
- Salt & pepper
Instructions
Preheat oven to 400 degrees Fahrenheit.
Combine potato pieces and olive oil in a large bowl. I didn't put measurements on this because you really can cook any amount of these potatoes. They often come in a small pack in the produce department. I bought two packs and needed about 2 tablespoons of olive oil to coat them thoroughly. Just drizzle on enough olive oil to coat the potatoes but not drown them.
Sprinkle about a tablespoon of parsley or enough to nicely season the potatoes. I used dried but in the summer when I have fresh in the garden, I'll use that.
Salt and pepper to taste. Give everything one last stir.
Spread potatoes in a single layer out on a baking sheet and cook for about 25 minutes or until they're fork tender.
