Bisquick Blackberry Cobbler Recipe

  • 3 cups of blackberries
  • 1 tablespoon cornstarch
  • ½ cup sugar
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon orange juice
  • 1 tablespoon water
  • 1 teaspoon orange zest
  • 1 tablespoon of butter, melted
  • ¼ cup milk
  • 1 cup Bisquick mix
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon sugar
  1. Preheat the oven to 425 degrees Fahrenheit.
  2. In a medium saucepan combine the sugar, cornstarch, and cinnamon. Then stir in the blackberries,  orange juice, water, and orange zest. Cook over medium to medium-high heat until boiling.  Stir while boiling for about 3 minutes.
  3. Evenly divide the blackberry mixture into four ramekins.  The ones I used were 7oz. dishes.
  4. Use a fork to stir the topping: Combine the melted butter, milk, Bisquick, cinnamon and sugar until well mixed.  Drop hunks of the topping evenly on top of all of four of your dishes of blackberry mixture.
  5. Place your ramekins on a baking sheet so you don't have a mess in your oven should they overflow.  I put mine on top of a silicone baking sheet to prevent them from slipping when I put them in and out of the oven.
  6. Bake for 15 minutes or until the topping is golden brown and the blackberries are bubbly.  Allow to cool a bit before serving but they're best served warm...with vanilla ice cream of course!  You can make them ahead of time and refrigerate until you're ready to eat.  Warm up in the microwave for one minute or reheat in the oven at 325 degrees Fahrenheit for about 10 minutes.
