After a few batches, I added orange and lemon zest. Also added a cream cheese center by balling it up and freezing before adding to the muffins. Next batch I might spice up the cream cheese for layer if flavor. I topped them with finishing sugar when they came out of the oven for a cripy top too! This is a new favorite!

Since I have a lot of honey, I used 1/2c honey, and 1/4c granulated. I baked my cookies at 300 for 13min and I was lazy and just did drop cookies, no fancy rolling into balls.

I did use a plant based butter and that didn’t seem to be a problem. I wish they were a bit more lemoney; I will probably add more zest to the next batch. I also am going to make a simple lemon and powdered sugar glaze. Overall I was very happy with them! Definitely bookmarking for future use.
