Summer food is some of my favorite. I do my best to keep it cool and easy, not heat the entire house up with the oven when I can help it and we grill, baby, grill whenever possible.
I’m sharing my very favorite go-to summer recipes that I make all the time. Let me know if you try any of these. They’re all delish, promise. We keep coming back for more!
1. Vanilla Mocha Iced Coffee
It’s no secret I love coffee and when it’s brutally hot out there, iced coffee is my jam. I love to jazz it up a bit with some flavors and sit out on my patio and pretend I’m fancy. This Vanilla Mocha Iced Coffee recipe is my favorite. Very easy to make and just enough flavor to delicious but not overpowering.
2. Zesty Pasta Salad
I make this Zesty Pasta Salad recipe all the time. All. The. Time. It’s so, so easy and the kids love it. Sometimes when I’m in a rush I’ll do it for dinner and we have the leftovers for lunch the next day. I even make this one during the school year and pack it in school lunches!
3. Homemade Pesto
I LOVE pesto and try to grow a bunch of basil in my garden so I can whip up this recipe for Homemade Pesto and eat it all summer, and have enough to freeze and save for those winter months when you’d die to get something fresh from the garden.
4. Peanut Butter No-Bake Snack Balls
I think everyone in the house is addicted to these Peanut Butter No-Bake Snack Balls. I make them often to have on hand when we need snacks (always basically) but my favorite time to make them is right before we go to the beach. I’ll whip up a double (or triple!) batch and pack them in a cooler. So good!
5. Grilled Corn on the Cob
We grill out as often as possible over the summer. I hate doing dishes (duh!) and heating up the oven when it’s already hot to begin with. And nothing says summer like corn on the cob! This recipe for Grilled Corn on the Cob couldn’t be easier and it’s so tasty. Plus no giant bot of water to boil to cook it. Win!
6. Baked Potatoes on the Grill
The idea is, get the entire meal on the grill. Main dish, sides, everything. Baked Potatoes on the Grill are pretty much the go-to side for any grilled meal we make. This, in my opinion, is the BEST way to to make them!
7. Key Lime Pie
This isn’t even my recipe but I love it. My friend Keri Lyn at She Saved introduced me to her Easy Key Lime Pie Recipe and the entire family was singing her praises. Know what I like about this one? Not only is it fresh and delicious, perfect for summer, but it’s no-bake and goes together in a snap. Perfect for summer dessert!
8. Fruit & Pudding Trifles
There’s always an occasion you need a dessert for. Something that looks sorta nice but doesn’t require too much effort. These Individual Fruit & Pudding Trifles in Wine Glasses are just the thing. So easy to throw together (the kids can do it!) and they’re delicious. Use whatever fresh fruit you have on hand!
