It’s back-to-school time! Are we cheering or crying? Or are you like me and doing both? Summer is the best but wow, this mom is READY for some structure. So this week I send both of my kids back to school, my daughter in 3rd grade and my son, my wee little baby, starts kindergarten. And I’m back to early alarm clocks, evening soccer practice, homework, and packing school lunches. Neither of my kids are a big fan of the cafeteria lunch (who can blame them?) so I pack for both of them pretty much every day.
The standard PB&J is a good standby but I like to mix it up and have some fun with our school lunches. So when I got the invite to join Peanut Butter & Co. on their #PBJrevolution I was all about it. Where do I sign? First of all, I love the idea of taking a twist on the classic. Secondly, I have an addiction to Peanut Butter & Co. peanut butters. No really. It’s an issue but I have no intention of doing anything about it. It’s who I am, people. Love me for it. I’ve also got to tell you, this is the first time I tried the Peanut Butter & Co. jam and WOWZA, it is SO good! All natural and absolutely delicious.
I came up with a recipe Peanut Butter and Jelly Crepes and let me tell you, they are divine. My kids love them and so do I. Make the crepes ahead of time so you have a bunch stashed in the fridge and can whip them together in no time in the morning when you’re packing lunch.
Peanut Butter and Jelly Crepes Recipe In a medium mixing bowl, whisk the eggs. Then add flour and whisk together as much as you can. Slowly add the milk and whisk. Then add the water and whisk. Add the salt and slowly add the butter, whisking until everything is well combined. *TIP: If your batter is a little lumpy an immersion blender. Works like a charm. Heat a griddle or frying pan to medium high heat. Spray lightly with cooking spray if it's not a nonstick surface. Pour about 1/4 cup of crepe batter into the middle of the pan, then pick it up by the handle and rotate your wrist in a circular motion so the batter spreads into a larger circle. Cook until underside begins to brown, about 2 minutes. Use a spatula to flip and cook another 2 minutes on the other side. Allow crepes to cool after cooking before making them into PB&Js so they don't melt the filling. To assemble: Put a strip of peanut butter in the middle of the crepe and along both edges (picture above). Then put a stripe of jelly in between each peanut butter stripe. So you have, from one side to the other: PB, jelly, PB, jelly, PB. Starting at one peanut butter edge, roll the crepe all the way up. The peanut butter on the last edge will serve as a 'glue' to hold the crepe together. Cut into pieces and secure with toothpicks. Or eat it whole!Peanut Butter and Jelly Crepes

These are so, so good. My kids aren’t going to be the only one eating Peanut Butter & Jelly Crepes for lunch this school year! Give ’em a whirl. I bet you a peanut butter sandwich your kids will love them, too. 😉
