You probably know Wisconsin is well-known for its cheese. Did you know that 90-95% of Wisconsin milk is used to make cheese? Wow! I had the chance to meet with the folks from Wisconsin Cheese as well as some actual cheesemakers and fell in love with varieties that I never even knew existed. I’m thrilled that their sponsorship of our event not only educated me but make me a cheese believer!
Wisconsin Cheese Products
Wisconsin wins more awards for cheese than any other state in the country. They make 25% of all the cheese in the US, and the thing that I love most is that 99% of farms are family-owned.
There are 10,000 dairy farm families in Wisconsin and the dairy farmers work very closely with the cheesemakers. Some of them are both, which is what they call a homestead farm.
Look at these delicious varieties. Their booth at the Summer Fancy Food Show was huge and we got to meet several cheesemakers and taste their goodies. It was all amazing, and all so unique.
This is Marieke Penterman, maker of Marieke’s Gouda which has won numerous awards. She’s so charming and you guys. HER CHEESE. I don’t have the words to tell you about her gouda. It’s absolutely amazing. You’ll see my recipe using it below, but I have been munching on it with grapes (and wine, of course) regularly. My big mistake was sharing with my husband and kids because sadly it’s gone now. This lady is THE gouda pro!
Snacks, Lunches, and More
The great thing about cheese is how versatile it is. It’s really perfect for recipes for any meal of the day, and it’s great for snacks too.
Wisconsin Cheese put together these pairings for us and gave me some great ideas for the kids’ lunchboxes this year.
I made a really quick salad for dinner one night with spring mix, cucumber, beets, and Wisconsin Cheese string mozzarella. Delicious, so easy, and even though my kids aren’t huge fans of lettuce just yet, they picked the cheese, beets, and cucumbers off the top and enjoyed them with their meal.
A little cracked pepper on top fancied it up. This is a great side dish that I threw together in just a couple of minutes.
This is been my evening snack of choice lately: Marieke’s Gouda, red grapes, and a glass of wine. Wisconsin Cheese is perfect for pretty much any meal or snack. There’s so much variety which is something I’m so glad I learned. I honestly didn’t know how much I enjoy certain kinds of cheeses because I wasn’t familiar with them at all. I found a few that I just love.
Potato Stacks with Gouda Cheese Recipe
I seriously can’t even tell you how good and how easy these are to make. I am beyond impressed with myself because don’t they look fancy? There are about 4 ingredients here, not counting salt and pepper.
If you want a delicious side dish (and these could honestly serve as the entire meal) you have to try my Potato Stacks with Gouda Cheese Recipe.
I knew I wanted to make something with Marieke’s Gouda because it is just SO good. It’s all gone now and I nearly assaulted my husband when I saw him eating the last piece…but that’s a story for another day. (You really need to try this cheese!)
The directions are very simple: thinly slice the potatoes, mix with with a cream and garlic mixture, put them in a muffin tin and bake. Top them with shredded gouda and bake some more. That’s pretty much it!
And this is how picture perfect they came out. We LOVED them. I’d tell you how they are leftover but I didn’t get to experience that. So here’s the recipe. I hope you’ll give it a whirl!
Potato Stacks with Gouda Cheese Recipe
These Potato Stacks with Gouda Cheese are so easy to make with very simple ingredients, yet taste and look like they came from a fancy restaurant. A delicious, easy side dish recipe! Preheat oven to 350 degrees Fahrenheit. Spray 12-cup muffin tin with cooking spray Place the sliced potatoes in a large bowl. Combine the heavy cream, garlic, salt and pepper, and pour over the potatoes. Toss to coat. Stack potatoes in the muffin tins. You should easily be able to fill each one. Pour the remaining cream mixture over the potatoes. Cover with foil and bake until tender, about 40 minutes. Remove from oven, top with shredded gouda cheese. Bake 20 more minutes. If your potato stacks haven't browned by the end of this cooking time, turn the broiler on and place the muffin tin underneath of it for 1-3 minutes. Watch it carefully so they don't burn. Remove from oven. Let them firm up for about 5 minutes. Remove with a fork and enjoy!Potato Stacks with Gouda Cheese Recipe

Very easy, right? And very few ingredients. You can garnish with a little chopped parsley for color if you’d like to get fancy, but that’s totally optional.
My kids keep asking me when we’re making these again. I need to get my hands on more of that gouda!
