My local farmer’s market is open every Tuesday and I’ve been hitting it each week as soon as I get my kids to school. In addition to the yummy, inexpensive produce I find there, I discovered a new favorite pasta. Pappardelle’s Pasta is based in Colorado but has stands at farmer’s markets all over the country. Every week I’ve been trying a different variety of pasta and we have it for dinner one night each week. You guys, this isn’t like pasta you get at the grocery store. It’s amazing, so delicious and the flavors? You won’t find these anywhere else!
Papparedelle’s sent me Yellow Bell Pepper Papparedelle to try, and some Southwest Orzo which I think is going to be fantastic in a cold pasta salad with some corn and black beans. The great thing about this company is that for every pasta flavor they have, you can find at least 2 recipes on their website. I love that for some quick, delicious inspiration.
Look at that yummy pasta! I love these Pappparedelle noodles. They’re thick and long (which the kids get a kick out of!) and have a real bite to them. This one was fantastic and it’s the second time I’ve tried this particular cut. We really like it!

They sell the dry cut pasta for $8 a pound. Now, you might think that’s a little spendy for pasta and I do too, but I still buy it at my market every single week. Here’s why: It’s still a cheap dinner. This recipe I made below still only cost me a max of $12 to make for my family of 4 and we had leftovers. That’s inexpensive for a nice dinner. And that’s the other reason I think it’s a good value: It’s actually a LOT of pasta, very filling, and it’s special. Papparedelle’s pasta is super high-quality, handmade, and a real treat to eat.
I whipped up a quick dish for dinner that was a huge hit with my family, Lemon Ginger Yellow Bell Pepper Pappardelle Pasta With Peas. This recipe is so simple. I actually had everything on hand which is an added bonus on a busy night! You probably do, too, except maybe the fresh ginger which is SO cheap in your produce section.
Lemon Ginger Yellow Bell Pepper Pappardelle Pasta With Peas Boil a large pot of salted water and cook the pasta until al dente, about 8-10 minutes. In the last minute of cooking add the peas to the pot. Drain when done and combine with sauce. While you're waiting for the water to boil and while the pasta is cooking, prepare the sauce. In a large skillet melt the butter over medium heat. Add the minced garlic and ginger and cook until tender, about 3 minutes. Add the olive oil and paprika, salt and pepper to taste. Stir to combine. Add the lemon zest and juice. Stir to combine. When the pasta is done and drained, pour the sauce into the pasta pot, scraping the skillet with a spatula to get every last drop!
