I’m a big fan of puff pastry for tasty recipes, and these Easy Raspberry Puff Pastry Dessert Pinwheels were born out of snow day morning when I needed some kind of pick-me-up to survive another day in the house.
I had a leftover sheet (they come in a 2-pack) after using one to make chicken pot pie the night before, so I grabbed just a couple of ingredients out of the fridge and voila! So easy, so tasty, and I served them for breakfast but I think they’re more of a dessert. Let’s just say you can eat these any time of day and get away with it.
Working right on the baking sheet, open up the puff pastry sheet and cut it into 4 equal squares. A pizza cutter is perfect for this job. Then cut into each corner, not quite to the middle. This will make the pinwheel arms. Side note: These Sur La Table baking sheets were a gift from my Mom and they are the BEST.
Place a dollop of raspberry spread (try to use a good brand, not just PB&J stuff) in the center of each square and top with fresh berries. You could easily do this with blackberries, too!
Fold alternating sides of each corner into the center of the square and squeeze them together to make a pinwheel. Brush the dough with an egg wash and sprinkle with sanding sugar before baking. So easy, right?

Easy Raspberry Puff Pastry Dessert Pinwheels
These Easy Raspberry Puff Pastry Dessert Pinwheels are a snap to make and can double as breakfast, too! Preheat oven to 400 degrees Fahrenheit. Use a pizza cutter or sharp knife to cut the puff pastry dough into 4 equal squares. I do this right on the baking sheet. Cut into the corners of each square as shown, not quite to the middle of the square. Spoon a dollop (probably about 2 teaspoons, just eyeball it) of raspberry spread into the center of each puff pastry square. Place 3-4 fresh raspberries on top of the spread. Make your pinwheels by folding alternating sides of each corner into the center of the square, then pinch them together. Refer to the picture above to see how this is done. Brush the beaten egg over each pinwheel and sprinkle with sanding sugar if you have it. Bake until golden brown, about 15-18 minutes. Mine were done in 15.Easy Raspberry Puff Pastry Dessert Pinwheels
